- Preheat the oven to 350°F (175°C) and grease a 12-cup muffin pan with non-stick cooking spray.
- Crumble the sausage into a skillet over medium-high heat, cook until no longer pink, then drain and cool slightly.
- In a large mixing bowl, lightly beat the eggs before adding the shredded cheese, Bisquick, and cooked meat.
- Fill the prepared muffin cups about three-quarters full with the batter mixture.
- Bake for 18-20 minutes until the centers are set and the tops turn golden brown.
