  • 1 pound breakfast sausage Roll format, crumbled and cooked
  • 4 large eggs Lightly beaten
  • 1 cup sharp Cheddar cheese Shredded
  • 1 cup Bisquick baking mix Creates the fluffy structure

Method
 

  1. Preheat the oven to 350°F (175°C) and grease a 12-cup muffin pan with non-stick cooking spray.
    A wooden spatula stirs warm, crumbled brown sausage meat inside a cast iron skillet.
  2. Crumble the sausage into a skillet over medium-high heat, cook until no longer pink, then drain and cool slightly.
  3. In a large mixing bowl, lightly beat the eggs before adding the shredded cheese, Bisquick, and cooked meat.
  4. Fill the prepared muffin cups about three-quarters full with the batter mixture.
    A hand spoons thick, lumpy sausage and cheese batter into a metal muffin tin.
  5. Bake for 18-20 minutes until the centers are set and the tops turn golden brown.
