Ingredients

  • 4 medium cooking apples Bramley or Granny Smith, peeled and chopped
  • 1 tablespoon lemon juice Prevents browning
  • ½ cup granulated sugar Divided use for filling and topping
  • ¾ cup all-purpose flour Creates the crumbly topping structure
  • ½ cup butter Cold and cubed

Equipment

  • 1 8x8-inch ovenproof dish For assembling and baking
  • 1 Mixing bowl For preparing the crumb topping
  • 1 Knife For chopping the apples

Method

  1. Peel, core, and chop the cooking apples into uniform chunks so they soften at the same rate in the oven.
Hands use a large knife to chop fresh red apples into bite-sized pieces on a wooden cutting board.
  2. Toss the chopped fruit directly in the baking dish with lemon juice and a quarter cup of sugar to prevent enzymatic browning.
  3. Rub the cold butter cubes into the flour and remaining sugar using your fingers until the fats coat the powders into coarse breadcrumbs.
Hands rub cold butter into a mixture of rolled oats, flour, and sugar to create a crumbly topping inside a bowl.
  4. Sprinkle the coarse mixture evenly over the fruit and bake at 350°F for forty minutes until golden brown and bubbling.

Notes

Keep your butter very cold before rubbing it into the dry ingredients to ensure the topping stays crumbly instead of melting into a solid paste.
