  • 12 oz andouille sausage, sliced into rounds Adds smoky depth
  • 1 lb large shrimp, peeled and deveined
  • 1 ½ cups long grain white rice
  • 1 large onion, diced
  • 3 bell peppers (red, green, and yellow), chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 14.5 oz crushed tomatoes, canned
  • 3 cups chicken broth
  • 2 tablespoon Cajun seasoning
  • 1 tablespoon paprika
  • ½ teaspoon cayenne pepper Adjust to taste
  • 2 bay leaves
  • 2 tablespoon olive oil
  • Salt and black pepper To taste

Method
 

  1. Cook chicken pieces in hot oil until golden on all sides to seal in the juices.
  2. Brown the sausage slices in the same pot until the edges become crispy and caramelized.
  3. Sauté the onion, peppers, and celery until softened to release their aromatics.
  4. Stir in the minced garlic briefly until the scent becomes fragrant.
  5. Mix in the Cajun seasoning, paprika, and cayenne to coat the vegetables evenly.
  6. Stir in the rice for a minute to toast the grains slightly.
  7. Add liquids and bay leaves before returning chicken to the pot and covering to simmer.
  8. Simmer the shrimp in the pot until they turn pink and opaque.
  9. Rest the pot covered off the heat to allow the rice to fluff perfectly.
