  • 1 9-inch pie crust baked and cooled
  • 3 cups heavy whipping cream divided
  • 1 ⅚ cups powdered sugar divided (⅓ cup for cream, 1 ½ cups for filling)
  • 4 tablespoons unsalted butter
  • 4 ounces semi sweet chocolate chips
  • ½ cup cocoa powder
  • 8 oz cream cheese softened
  • chocolate shavings for garnish

Method
 

  1. Whip the heavy cream and powdered sugar in a chilled bowl until stiff peaks form.
  2. Beat the softened cream cheese with cocoa and sugar until the texture is perfectly smooth.
  3. Melt the butter and chocolate chips in short bursts until the mixture is glossy.
  4. Fold the melted chocolate and half of the whipped cream into the cheese mixture gently.
  5. Pour the chocolate mixture into the shell and chill for four hours until firm.
  6. Spread the remaining whipped cream over the top and garnish with chocolate curls.
