Method

  3. Boil the water, butter, sugar, and salt in a large saucepan over medium-high heat.
  4. Add the flour, reduce heat to medium-low, and stir constantly with a rubber spatula until smooth.
  5. Transfer the mixture to a large bowl, let it cool for five minutes, then blend in the vanilla and egg until cohesive.
  6. Pipe six-inch lengths of dough into the hot oil, cutting the ends with clean scissors.
  7. Fry the pieces until golden brown, about two minutes per side, then transfer to paper towels briefly before rolling in the cinnamon sugar.
