Ingredients
  

  • 8 slices rye or sourdough bread Firm bread holds up best
  • 1 pound sliced corned beef Thinly sliced
  • 8 slices Swiss cheese Mild and nutty flavor
  • 1 cup sauerkraut, drained Squeeze out excess liquid
  • ½ cup Russian dressing Or Thousand Island
  • 4 tablespoons butter, softened For grilling the bread

Equipment

  • 1 Large skillet For grilling sandwiches
  • 1 Spatula For flipping
  • 1 Knife For spreading butter

Method
 

  1. Spread softened butter on one side of each bread slice to create a rich, golden crust.
  2. Flip the bread and spread Russian dressing generously on the unbuttered sides to add tangy flavor.
  3. Layer Swiss cheese, corned beef, sauerkraut, and more cheese on four slices to build the sandwich.
  4. Top with the remaining bread slices ensuring the buttered sides face outward for grilling.
  5. Grill in a skillet over medium heat for 3–4 minutes per side until the bread is golden brown.
