Method
 

  1. Combine the whole milk, coconut milk, rice, and salt in a large heavy saucepan and bring to a boil while stirring.
  2. Reduce heat to low, add the cinnamon stick, cover the pan, and simmer gently for 15 minutes.
  3. Uncover and simmer for another 8 minutes, stirring frequently near the end to prevent scorching.
  4. Whisk egg yolks, sugar, and vanilla in a bowl, then temper by whisking in 1 cup of the hot rice mixture.
  5. Return the mixture to the saucepan and cook for 1 minute until it thickens and coats the back of a spoon.
