  • 12 oz lo mein noodles Or spaghetti
  • 1 lb beef sirloin, sliced thin Against the grain
  • 2 tablespoon vegetable oil Divided use
  • 1 large onion, sliced Yellow or white
  • 2 carrots, julienned For crunch
  • 1 bell pepper, sliced Any color
  • 2 cups cabbage, shredded Napa or green
  • 3 cloves garlic, minced Fresh is best
  • 1 tablespoon fresh ginger, grated Aromatic base
  • 3 green onions, chopped For garnish
  • 2 tablespoon sesame oil Divided use
  • 3 tablespoon soy sauce Low sodium
  • 2 tablespoon oyster sauce For umami
  • 1 tablespoon cornstarch Thickener
  • 1 teaspoon sugar Balances salt
  • ½ teaspoon black pepper Freshly ground

Equipment

  • 1 Wok or large skillet For stir-frying
  • 1 Large pot For boiling noodles
  • 1 Small bowl For mixing sauce

Method
 

  1. Boil noodles until tender and toss with sesame oil so they do not stick.
  2. Sear the sliced beef in hot oil without stirring until it is browned.
  3. Stir-fry the onion, carrots, and peppers in remaining oil until slightly softened.
  4. Add garlic, ginger, and cabbage while stirring until the leaves begin to wilt.
  5. Whisk soy sauce, oyster sauce, cornstarch, sugar, and pepper until the mixture is smooth.
  6. Toss noodles, beef, and sauce in the pan until everything is evenly coated.
  7. Garnish with green onions and remaining sesame oil before serving the dish immediately.

Notes
