Instructions

  • Place chocolate chips in medium bowl. If using chocolate bar, chop into small uniform pieces for even melting.
  • Warm heavy cream in saucepan over medium heat until it reaches a gentle simmer. Watch carefully to avoid boiling.
  • Pour hot cream over chocolate and let sit 1 minute undisturbed. Gently stir until completely smooth and glossy.
  • Mix in vanilla extract or desired flavoring until evenly distributed throughout the chocolate mixture.
  • Cover bowl and refrigerate for at least 3 hours or overnight until firm enough to roll into balls.
  • Using clean hands or small scoop, form mixture into 1-inch balls. Roll each truffle in chosen coating.
