Equipment

  • 1 Medium saucepan To simmer strawberries and grape juice for the base
  • 1 Fine mesh strainer To strain strawberry solids from the liquid base
  • 1 Cocktail shaker To mix the drink ingredients with ice
  • 4 Tall glasses For serving the pink drinks over ice

Ingredients

  • cups White grape juice - For the strawberry acai base
  • 1 cup Fresh strawberries, hulled and sliced - Choose ripe, sweet berries
  • ½ teaspoon Acai powder - Available at health food stores
  • ½ teaspoon Green coffee extract powder - For authentic Starbucks flavor
  • ¼ teaspoon Passionfruit powder - Adds tropical notes
  • 1 teaspoon Fresh lemon juice - Brightens the flavor
  • 2 cups Sweetened coconut milk - Use carton variety, not canned
  • ¼ cup Freeze-dried strawberries - For garnish and extra flavor
  • 4 cups Ice cubes - For serving

Instructions

  • Combine white grape juice and sliced strawberries in medium saucepan. Bring to boil over medium-high heat.
  • Lower heat to simmer for 10 minutes until strawberries break down completely. Kitchen will smell amazing!
  • Remove from heat. Strain through fine mesh sieve into heatproof bowl, pressing strawberries with wooden spoon to extract all liquid.
  • Return strained liquid to saucepan over low heat. Whisk in acai powder, green coffee extract, and passionfruit powder until mostly dissolved.
  • Remove from heat, stir in lemon juice. Transfer to jar and refrigerate until completely cool, about 1 hour.
  • Add ½ cup strawberry acai base and ½ cup coconut milk to ice-filled shaker. Shake vigorously for 10 seconds.
  • Pour into ice-filled glasses and top with freeze-dried strawberries. Enjoy immediately!

Notes

The secret to this pink drink starbucks recipe is making your own strawberry acai base — it tastes so much fresher than store-bought versions. The base keeps in the fridge for a week, so you can make multiple drinks throughout the week. My daughter loves helping me shake the drinks!
