Ingredients
  

  • ¼ cup chia seeds Rich in omega-3s
  • 1 cup almond milk Or any preferred milk
  • ½ cup brewed coffee, cooled Strong or espresso
  • 3 tablespoon maple syrup or honey Divided use
  • 1 teaspoon vanilla extract Flavor enhancer
  • ¼ cup mascarpone cheese Or Greek yogurt
  • 2 tablespoon cocoa powder For dusting
  • ladyfinger cookies Optional garnish

Method
 

  1. Whisk the chia seeds, almond milk, cooled coffee, 2 tablespoons syrup, and vanilla in a jar until well combined.
  2. Cover and refrigerate the mixture for at least 4 hours or overnight to allow the seeds to thicken.
  3. Mix the mascarpone cheese with the remaining tablespoon of maple syrup until smooth and creamy.
  4. Spoon half the pudding into a glass, add the cheese layer, and top with the remaining pudding.
  5. Dust the top generously with cocoa powder using a fine mesh sieve before serving.
  6. Chill for 10 more minutes to let the layers set, or garnish with a cookie and eat immediately.
