Ingredients
  

  • 2 oz vodka any decent vodka
  • 2 oz Concord grape juice preferably chilled
  • 0.5 oz fresh lime juice freshly squeezed, not bottled
  • 2-4 oz ginger ale add to taste, chilled
  • 1 cup ice cubed, for serving
  • 3 pieces frozen grapes optional, instead of ice cubes
  • 1 slice lime wheel for garnish
  • 1 piece candied ginger optional garnish

Equipment

  • 1 Cocktail shaker To shake the vodka, grape juice, and lime juice
  • 1 Highball or rocks glass For serving over ice
  • 1 Bar spoon To gently stir in the ginger ale
  • 1 Cocktail pick Optional garnish with lime wheel, grape, and candied ginger

Method
 

  1. Prepare the graham cracker crust: Mix graham cracker crumbs, melted butter, and 1 tablespoon sugar until it resembles wet sand. Bake at 350°F (175°C) for 10 minutes, then let cool completely.
  2. Make the strawberry sauce: Dice half the strawberries and cook them with 1 tablespoon sugar and a splash of lemon juice over medium heat. Stir in cornstarch slurry and cook until thickened. Cool completely.
  3. Prepare the cheesecake base: Beat softened cream cheese with remaining sugar until smooth. Mix in condensed milk, vanilla extract, and lemon juice.
  4. Whip the cream: In a separate bowl, whip cold heavy cream until stiff peaks form.
  5. Gently fold the whipped cream into the cheesecake mixture until fully combined.
  6. In a loaf pan, layer half the base, half the strawberry sauce, half the diced strawberries, and half the crust. Repeat and gently swirl with a knife.
  7. Cover with plastic wrap touching the surface and freeze for at least 6 hours or overnight.
  8. Let it sit at room temperature for 5 minutes before scooping. Top with extra strawberries or crushed graham crackers if desired.
