Ingredients

  • 2 cups all-purpose flour Creates the structure
  • 2 tablespoons granulated sugar Adds sweetness and helps browning
  • 2 teaspoons baking powder Main leavening agent
  • ½ teaspoon baking soda Extra lift and crispiness
  • ½ teaspoon salt Enhances flavor
  • 2 cups buttermilk Makes them fluffy (or use milk + vinegar)
  • 2 large eggs Binds ingredients and adds richness
  • cup vegetable oil Or melted butter for richer flavor
  • 1 teaspoon vanilla extract Adds warm flavor
  • Cooking spray For greasing waffle maker
  • Butter For serving
  • Maple syrup For serving
  • optional Fresh berries Strawberries, blueberries, or raspberries
  • optional Whipped cream For topping

Equipment

  • 1 Belgian waffle maker For making deep-pocket waffles
  • 2 Large mixing bowls One for wet ingredients, one for dry
  • 1 Whisk To mix ingredients smoothly
  • 1 Measuring cups and spoons For accurate ingredient measurements
  • 1 Baking sheet To keep waffles warm in oven while cooking batches

Method

  1. Turn on Belgian waffle maker to preheat completely for 5-10 minutes. A fully heated waffle maker ensures crispy waffles that won't stick.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt until well combined with no lumps.
  3. In a separate bowl, whisk buttermilk, eggs, oil, and vanilla extract until smooth and well blended.
  4. Pour wet ingredients into dry ingredients and gently stir until just combined. Some small lumps are okay, don't overmix or waffles will be tough.
  5. Spray preheated waffle maker with cooking spray. Pour ¾ to 1 cup batter onto center of waffle iron (amount depends on your waffle maker size).
  6. Close lid and cook without opening for 4-5 minutes until waffle is golden brown and crispy. Wait until steam stops before checking.
  7. Transfer cooked waffles to baking sheet in 200°F oven to keep warm while cooking remaining batches.
  8. Serve hot with butter, maple syrup, fresh berries, whipped cream, or your favorite toppings. Enjoy immediately for best texture.

Notes

The magic of perfect Belgian waffles is in the contrast - that crispy golden exterior giving way to a cloud-like, fluffy center. Don't rush the preheating, and resist opening that waffle maker too early. Your patience will be rewarded with the crispiest, most golden waffles that hold syrup in every perfect pocket.
