  • 1 lb ground beef 80/20 blend
  • 2 medium sweet potatoes, cubed For sweetness
  • 3 tablespoon hot honey Divided use
  • 2 tablespoon olive oil For roasting
  • 2 teaspoon garlic powder Divided use
  • 1 teaspoon smoked paprika Adds color
  • 1 teaspoon cumin Earthy flavor
  • 2 cups cooked white rice Or cauliflower rice
  • 1 ripe avocado, sliced Healthy fat
  • fresh cilantro Garnish

Method
 

  1. Toss sweet potatoes with oil, paprika, and half the garlic powder before roasting at 425°F for 25 minutes.
  2. Brown the ground beef in a skillet over medium-high heat until no pink remains and edges crisp.
  3. Drain excess fat and season the meat with cumin, salt, pepper, and the remaining garlic powder.
  4. Stir half of the hot honey into the cooked beef to create a sticky, savory coating.
  5. Assemble bowls with rice, beef, potatoes, and avocado, finishing with a final drizzle of honey.
