Ingredients

  • 1 cup whole milk Warmed to about 110°F (43°C)
  • 2 ¼ teaspoons instant or active dry yeast Builds the airy structure
  • 3 tablespoons granulated sugar Sweetens the dough
  • 3 tablespoons unsalted or salted butter Softened and cut into pieces
  • 3 cups all-purpose flour Spooned & leveled
  • 1 ¼ teaspoons salt Balances the flavors
  • 1 cup salted butter Slightly softened for lamination
  • 1 tablespoon all-purpose flour For the lamination butter
  • ¾ cup granulated sugar For the coating
  • 1 tablespoon ground cinnamon For the coating

Equipment

  • 1 stand mixer Fitted with a dough hook
  • 1 Rolling Pin For flattening the dough evenly
  • 1 standard 12-cup muffin pan Holds the spiral shape
  • 1 silicone baking mat Prevents sticking during rolling

Method

  1. Whisk the warm milk, yeast, and sugar in your mixer, letting it sit until foamy before adding the flour and salt.
Hand using a metal whisk to blend a frothy, bubbly liquid mixture.
  2. Beat the mixture with a dough hook for five minutes, then let it rise in a warm spot for two hours.
  3. Spread softened butter over the chilled rectangle, fold it like a letter, and roll it out repeatedly with short resting intervals.
Hands pressing a wooden rolling pin into soft, multi-layered butter pastry dough.
  4. Cut the rolled pastry into long strips, stack them, and coil them into a spiral before placing them in the muffin pan.
  5. Bake at 350 degrees Fahrenheit for twenty-five minutes, then roll the warm pastries in the cinnamon-sugar mixture.

Notes

Keep your butter cool but pliable during the rolling process; if it gets too warm and starts melting into the dough, chill the pan for an extra five minutes before continuing.
