Method

  4. Fold in the shredded sharp cheddar, 1.5 cups of the smoked Gouda, and half of the crumbled bacon.
  5. Transfer the mixture to the prepared baking dish and spread it into an even layer with a spatula.
  6. Top with the remaining ½ cup of smoked Gouda and the rest of the crispy bacon crumbles.
  7. Bake for 20-25 minutes until the dip is hot throughout and the cheese is bubbling around the edges.
  8. Garnish with fresh green onions immediately before serving warm with crackers or bread.
