  • 1 Tablespoon olive oil
  • 1 medium onion finely chopped
  • 1 medium green bell pepper chopped
  • 2 cloves garlic minced
  • 10.5 oz cream of mushroom soup
  • 10.5 oz cream of chicken soup
  • 10 oz diced tomatoes with green chiles undrained
  • ¼ cup chicken broth optional for thinner sauce
  • 1 teaspoon chili powder
  • 1 1 teaspoon cumin
  • 12 corn tortillas torn into bite-sized pieces
  • 3 cups shredded cheese cheddar or Mexican blend

Method
 

  1. Sauté the onion, bell pepper, and garlic in olive oil until the vegetables become soft and translucent.
  2. Whisk together both cream soups, tomatoes, broth, and spices in a large bowl until the sauce is uniform.
  3. Layer the tortillas, chicken, and soup mixture in a greased dish to ensure every bite is fully coated.
  4. Bake at 350 degrees until the cheese is melted and the edges are bubbling vigorously.

Notes
