- Preheat your oven to 350 degrees F and get out an 11x7 inch or 9-inch square baking dish.
- In a medium mixing bowl, combine cream of chicken soup, cottage cheese, sour cream, softened cream cheese, Creole seasoning, onion powder, and half the garlic powder.
- Gently fold the shredded rotisserie chicken and chopped parsley into your creamy mixture until every piece is evenly coated.
- In another bowl, combine crushed crackers with melted butter and the remaining garlic powder. Mix until the crackers are evenly coated.
- Spoon the chicken mixture evenly into your prepared baking dish, then sprinkle the mozzarella cheese over the top. Finish with the buttery cracker mixture.
- Place the dish on your foil-lined baking sheet and bake for about 35 minutes, until the crackers turn golden brown and the edges are bubbling beautifully.
