Ingredients
 

  • 1 can (10.5 oz) Cream of chicken soup - Use quality brand for best flavor
  • ½ cup Cottage cheese, small curd - Room temperature preferred
  • ½ cup Sour cream, full fat - Don't use light version
  • 4 ounces Cream cheese, softened - Must be room temperature
  • 1 ½ teaspoons Creole seasoning blend - Can substitute with other spice blends
  • ½ teaspoon Onion powder Granulated - not fresh
  • 1 teaspoon Garlic powder, divided - Divided between sauce and topping
  • 5 cups Rotisserie chicken - shredded Remove skin before shredding
  • 1 tablespoon Fresh parsley, chopped fine - For color and freshness
  • 30 pieces Buttery round crackers, crushed - Ritz brand works best
  • 4 tablespoons Unsalted butter, melted - Salted butter also works
  • 1 cup Mozzarella cheese, freshly shredded - Fresh melts better than pre-shredded
  • 1 teaspoon Scallions, sliced thin - For garnish

Instructions

  • Preheat your oven to 350 degrees F and get out an 11x7 inch or 9-inch square baking dish.
  • In a medium mixing bowl, combine cream of chicken soup, cottage cheese, sour cream, softened cream cheese, Creole seasoning, onion powder, and half the garlic powder.
  • Gently fold the shredded rotisserie chicken and chopped parsley into your creamy mixture until every piece is evenly coated.
  • In another bowl, combine crushed crackers with melted butter and the remaining garlic powder. Mix until the crackers are evenly coated.
  • Spoon the chicken mixture evenly into your prepared baking dish, then sprinkle the mozzarella cheese over the top. Finish with the buttery cracker mixture.
  • Place the dish on your foil-lined baking sheet and bake for about 35 minutes, until the crackers turn golden brown and the edges are bubbling beautifully.

Notes

The secret to perfect Million Dollar Chicken is letting cream cheese come to room temperature before mixing to prevent lumps. This casserole tastes even better the next day as flavors meld together beautifully.
