Ingredients
  

  • 1.5 lbs sirloin steak, cut into 1-inch cubes Or ribeye/strip steak
  • 1.5 lbs baby potatoes, halved Yukon Gold works too
  • 4 tablespoon olive oil, divided For cooking
  • 4 cloves garlic, minced Aromatic
  • 3 tablespoon butter For richness
  • 2 teaspoon fresh rosemary, chopped Herbal flavor
  • 1 teaspoon dried thyme Seasoning
  • 1 teaspoon paprika For color
  • 2 tablespoon fresh parsley, chopped Garnish
  • salt and black pepper To taste

Method
 

  1. Wash and halve the baby potatoes, then toss them with 2 tablespoons of olive oil, salt, and pepper.
  2. Cook the potatoes in a large cast iron skillet over medium-high heat for 15–18 minutes until golden and tender.
  3. Cut the steak into cubes and season generously with salt, pepper, paprika, and dried thyme.
  4. Push potatoes to the side, add remaining oil, and sear steak bites for 2–3 minutes per side until browned.
  5. Add butter, minced garlic, and rosemary to the pan, tossing everything together until fragrant and coated.
  6. Garnish with fresh chopped parsley and serve immediately.
