Ingredients

  • ½ cup protein powder Vanilla or chocolate flavor preferred
  • 1 can chickpeas Rinsed and drained thoroughly
  • ½ cup peanut butter Or nut or seed butter of choice
  • ¼ teaspoon salt Balances the sweetness
  • 2 ½ teaspoons pure vanilla extract Adds classic bakery aroma
  • cup brown sugar Or sweetener of choice, adjusted to taste
  • ½ cup chocolate chips Or sugar-free chocolate chips

Equipment

  • 1 Food processor For blending the chickpeas smoothly
  • 1 Rubber Spatula For folding in the chocolate chips
  • 1 measuring cups To portion the ingredients accurately

Method

  1. Add the rinsed chickpeas, protein powder, peanut butter, salt, vanilla, and sweetener to a food processor to begin breaking down the beans.
  2. Blend the ingredients on high speed until completely smooth, adding a tiny splash of milk if the mixture appears too dry.
Hands pour a small amount of almond milk into a thick protein cookie dough mixture inside a white bowl.
  3. Stir the chocolate chips into the dough using a rubber spatula to distribute the sweet morsels evenly without crushing them.
A silicone spatula folds dark chocolate chips into a thick, beige protein cookie dough inside a bowl.
  4. Serve immediately from the bowl or chill in the refrigerator for thirty minutes to achieve a firmer, scoopable texture.
