Method
 

  1. Whisk warm milk, yeast, and a pinch of sugar in a bowl to activate the yeast bubbles.
  2. Mix flour, cocoa, remaining sugar, salt, butter, egg, and coloring to form a soft dough.
  3. Knead the dough on a floured surface for 8–10 minutes until it is smooth and elastic.
  4. Rise the covered dough in a greased bowl for 1 hour until it has doubled in size.
  5. Roll the dough into a rectangle and spread with butter and cinnamon sugar to create the filling.
  6. Roll the dough tightly and cut into 12 even pieces using dental floss for clean edges.
  7. Proof the rolls in a greased pan for 30 minutes to allow them to puff up.
  8. Bake at 375°F for 25–30 minutes until the rolls are golden brown and cooked through.
  9. Frost the warm rolls with cream cheese icing immediately so it melts into the spirals.
