  • ¼ cup powdered sugar Sweetens the cream cheese

  • 1 pint strawberries Thinly sliced, reserve some for garnish
  • 8 egg roll wrappers We used Twin Dragon brand
  • Vegetable oil For frying the envelopes
  • Powdered sugar For dusting the finished pastry

Method
 

  1. Blend the softened cream cheese, powdered sugar, and sour cream together in a medium bowl until perfectly smooth.
    A metal spatula stirs a thick, glossy white cream mixture inside a bowl.
  2. Lay the wrappers in a diamond shape, spoon filling into the center, and top it with fresh fruit slices.
  3. Moisten the edges with water, fold the side corners in, bring the bottom up, and fold the top down to seal like an envelope.
    Hands fold the corners of smooth square dough into an envelope shape.
  4. Fry the sealed pastries in hot oil for two minutes per side until golden brown, then drain them on a paper towel.
  5. Garnish the warm pastries with a slice of fresh fruit and a heavy dusting of powdered sugar before serving.
