Ingredients
  

  • ¾ cup dairy free milk Heated to 110F
  • ½ cup granulated sugar Divided use
  • 4 cups bread flour Or all purpose flour
  • 2.5 teaspoons dry activated yeast For dough rise
  • 12 tablespoons vegan butter Room temperature
  • ¼ cup unsweetened applesauce Or dairy free yogurt
  • 12 ounces vegan cream cheese For the filling
  • ¼ cup vegan heavy cream Or coconut cream
  • 2 large gala apples Diced
  • 3 tablespoons light brown sugar For the apple topping
  • 2 teaspoons ground cinnamon For spiced flavor
  • ½ cup all purpose flour For the vanilla crumble

Method
 

  1. Combine the warm dairy-free milk, ¼ cup sugar, and yeast in a bowl to bloom for 10 minutes.
    A metal whisk stirs a bubbly, pale beige yeast mixture inside a ceramic bowl.
  2. Mix the flour, remaining sugar, yogurt, vanilla, bloomed yeast, and vegan butter until a dough forms.
  3. Knead the dough on high speed for 10-15 minutes, then let it proof in a warm area until doubled.
  4. Whisk the cream cheese filling ingredients together, and simmer the apple topping ingredients in a pan.
    Hands use a wooden spoon to stir warm diced apples in dark bubbling syrup.
  5. Divide the proofed dough into 8 balls, press a crevice into the center of each, and add the fillings.
  6. Brush the edges with vegan egg wash and bake at 375F for 18-22 minutes until golden brown.
